Bircher Muesli Bowl

Bircher Muesli Bowl - Deliciously Ella

This gut friendly breakfast bowl is great for busy mornings. Soaking oats overnight makes them easier to digest. Served with a mix of seeds, this muesli is full of fibre, plant-based protein and a variety of vitamins and minerals.

Ingredients
For the bircher muesli:

25g porridge oats
1 teaspoon chia seeds
1 teaspoon cold milled flax seeds
1 teaspoon hemp seeds
50g plain coconut yoghurt
1 eating apple, grated
β…› teaspoon ground cinnamon

To serve:
Extra spoonful of coconut yoghurt
Sprinkle of pumpkin seeds
Drizzle of maple syrup
Pinch of ground cinnamon

Method

In a medium bowl combine the porridge oats, chia seeds, cold milled flax seeds, hemp seeds, coconut yoghurt, grated apple and the β…› teaspoon of cinnamon. Stir until combined, then cover and leave in the fridge to soak overnight.

The next morning spoon the bircher muesli into a bowl. Top with a spoonful of coconut yoghurt, sprinkle with pumpkin seeds and drizzle with maple syrup, and dust over some extra cinnamon. Eat immediately.
