The Paloma is one of my all-time favourite cocktails, so I wanted to create one without the booze and with the same zingy high. Being alcohol free it is kinder to our gut, plus the main ingredient of grapefruit is high in polyphenols that can also be a nice boost for our gut microbiota. I reckon this one is perfect for sunny days and balmy nights.
60ml clean co T
60ml grapefruit juice - approx 1/2 ruby grapefruit
Juice 1 lime
Club soda (or sparkling water) to top
Sea salt to rim
1. Salt the rim of the glass by rubbing grapefruit around the edge and dipping in plate of salt.
2. Add Clean Co T shot.
3. Add the grapefruit juice and lime juice and stir.
4. Top up with club soda or sparkling water.
5. Garnish with grapefruit segment to serve.
