Dr Hazel Wallace brings us the viral scrambled oats. Not only are they quick and easy to whip up, it's also a delicious dish that your gut will love. The oats and banana provide great prebiotics for your gut bugs, what more could you want?
Ingredients
[serves 2]
1 banana, peeled
90g oats
1 egg
1 tbsp yogurt
1 tsp cinnamon
Pinch salt
Extra:
Berries to serve
Kefir to serve
Method
1. In a bowl, mash the banana with a fork. Add the oats, egg, yogurt, cinnamon and a pinch of salt. Mix to combine into a thick batter.
2. Grease a small frying pan with oil and add the batter to the pan. Cook for 5 minutes, then turn and break up the pieces into a scrambled egg-like consistency. Cook for a further 3-5 minutes until golden and cooked through.
3. Serve with kefir or yogurt and your favourite berries.
