Gut-Loving Grain Bowl by Dr Hazel Wallace

Get ready for a healthy and satisfying lunch idea with Dr Hazel Wallace's gut-loving grain bowl. This dish ticks all the boxes as it's packed with lots of greens, fibre and plant-based protein. One batch makes sure you're fuelled for three-days worth of gut-healthy lunches. 

Gut loving grain bowl on a bed of rocket

Ingredients

[serves 3]

1 tin of butterbeans, rinsed and drained
1 courgette, peeled into ribbons
200g of garden peas, thawed if frozen
2 handfuls of rocket leaves
50g shelled pistachios, chopped
100g dry pearl (or giant) couscous

For the dressing:
1 lemon, juiced
2 tbsp olive oil
1 tsp dijon mustard
Handful of basil leaves, chopped
Pinch of salt and black pepper to taste

Optional: 50g shaved parmesan

Method

Cook the couscous as per packet instructions and set aside. Meanwhile prep your vegetables.

To make the dressing combine all of the ingredients in a bowl and whisk together.

Add the butterbeans, courgette, peas, rocket, pistachios and cooked couscous into a bowl. Pour the dressing over and mix so that the ingredients are well coated. If using parmesan, stir or crumble through.

Divide between 3 lunchboxes to eat throughout the week or enjoy immediately.
